Step-by-step instructions for making this Makgeolli (막걸리, “Unfiltered Korean Suul”) will be provided with a lecture, A Brief History and Process of Suul by Sunook Park, the founder of California Suul Institute. We have carefully tested and selected the most essential ingredients and equipment for following our recipe in a contemporary setting, while preserving the time-proven wisdom and authenticity of classic Korean home brew culture.
As with most organic processes, building Suul requires a harmonious and collaborative endeavor with nature. Do your part with sincerity and love for nature’s resources, and nature will enfold its wisdom in return.

Ingredients
Sweet Rice, 1200g
Sweet rice, or Chapssal (찹쌀), is the harvested plant source of sugar and starch that feeds the brew for its characteristic and comforting flavor. Proper care and preparation gives the best chance at communicating the grain’s natural integrity.
Sunuruk, 150g
Nuruk (누룩) is the active fermentation starter cultivated by ancient technique. Sunuruk (서누룩) is our homemade barley, wheat, and mung bean based medley, germinated under neighborhood sage branches and cured in the Southern California sun.
Water, 2 Liters ±0.5L (not included in the kit)
Clean local water creates the conditions for the brew to come to life according to the qualities of your environment. Use room temperature filtered water in the brew.
